Selective picking, a practice common among the producers Bloom works with, means that each coffee cherry is chosen individually, one by one, only when it has reached the exact point of ripeness. On a single plant, you can find green, ripe, and overripe fruit all at once. Sorting through all of that demands attention, experience, and many hours of work.
That’s why, for us, sustainability has never been only about the environment — though the environment is absolutely central to it. It’s also about people. About ensuring that those who grow the coffee receive fair payment for what they produce, have access to dignified working conditions, and can reinvest in the future of their farms.
When we pay more for quality coffee, we’re not being extravagant. We’re acknowledging the real value of what’s in the cup — and making sure this system can keep going.
